We sought insights from experienced elders from Madurai and Chennai including people from Kallidaikurichi, Thangammalpuram, Vaithyapuram, Veerapuram who make appalam in their homes for personal use.

Meet Our Mentor
A 94-year-old woman, Rajam aunty from Kallidaikurichi who has lived in Madurai. Her guidance on the intricate methods of appalam preparation helped fulfill our vision of quality appalam production.

Traditional Techniques
Crafting the perfect appalam Choosing high – quality local urad dal.
Preparation Techniques – Grinding, kneading, and rolling the dough followed by Techniques for determining the perfect dough consistency based on the sounds made during rolling. The process ends with drying and coffmeting the appalam.

Production Philosophy
We express our gratitude to Rajam Aunty for her invaluable teachings. Our appalam is made using only local urad dal and traditional handcrafting methods without soda.
